Through lectures, discussions, and project-based learning, students develop skills in menu planning, cost control, purchasing, supervision, sanitation, and safety. Emphasis is placed on the theoretical aspects of managing cafeteria-style, buffet, and full table service operations, including scheduling, forecasting, and service design.
