Students will be introduced to the most challenging aspect of the baking and pastry arts industry, by cooking sugar, and manipulating it to form various items, such as beautiful flowers, or fruits. Pastillage returns as a nice complimentary medium, either with the sugar, or as a stand alone showpiece. 24.00 hours lecture and 36.00 hours laboratory. (Letter grade only)
