- CAM 321 Culinary Computations Units: 3 Hours: 54 hours LEC Prerequisite: None. Transferable: CSU This course will cover a variety of basic culinary computations necessary for the food service manager. The primary focus will be on measurements and recipe conversions. Other applicable topics may be covered including basic menu and labor costing and the use of spreadsheets for computational purposes. This course will serve as a pre-requisite for many higher level CAM courses.
