    Description
    Known as the land of seven moles, this course explores the culture and cuisine of Oaxaca, Mexico. We'll delve into the corn, chilies, chocolate, herbs and spices that form the foundation of its food as well as history, geography, and regional specialties. We'll examine ingredients, equipment, and fundamental techniques that are common to Oaxaca. Lecture Grading: Letter CART 060 and CART 040.
