    Description
    This course provides an overview of enology - the science and technology of winemaking. Students will study the principles and processes involved in transforming grapes into wine, including grape composition, fermentation, wine chemistry, maturation, and bottling. Emphasis is placed on the interaction between vineyard practices and wine quality, sensory evaluation, and the influence of winemaking decisions on flavor and quality. Students must be 21 years or older to participate in wine tasting.
