- This course introduces the science and practice of viticulture - the cultivation and management of grapevines for wine, table grapes, and raisins. Students explore the relationship between grapevine biology, climate, soils, and vineyard management techniques. Topics include grapevine anatomy and physiology, site selection, vineyard design, propagation, canopy management, irrigation, nutrient management, pest and disease control, and harvest timing.
