There is an emphasis on problem solving and applying cost controltechniquestomaximizeprofitswhilemanagingexpenses. Topics covered include establishing standards, cost-volume- profit-analysis, forecasting, purchasing and storage controls, menu costing and pricing, theft prevention, and labor controls.
