Transfers ToCSUDescriptionThis course provides laboratory experience by exploring the chemistry of food and the cooking process from a scientific basis. Laboratory exercises include hands-on chemical experiments related to the basic food categories (carbohydrates, lipids, proteins, minerals and water). Lab activities analyze caffeine in coffee and tea, investigate the acid content (pH) of food and beverages, and make artificial flavors. Chem 10 and Chem 11, if both completed, meet the CSU general education requirement for physical science with laboratory.
