- Prerequisite: CLN ART 101 | Lecture: 2 hours | Lab: 6 hours Introduction to lunch or dinner cooking techniques. Students will prepare lunch or dinner for the Servery Cafe & Grille. Students will be part of a rotation in the cafe and rotate all throughout the stations. Student will cover advanced cooking techniques, culinary management, supervision, leadership, cus- tomer service, communication, teamwork and time management.
