    This course will examine the evolution of food culture in the United States from a historical, contemporary, economic, political, and scientific survey of ethnic groups. The course will explore the impact of United States culture on ethnic cuisines and the impact of ethnic cuisines on the United States economy. Through the lens of cultural sensitivity and competency, the course will review current research on the health and nutrition-related implications of ethnic groups’ food choices/practices.
